IV- Les opérations de post traitement

Après le séchage, le produit doit subir quelques opérations destinées à le rendre commercialisable ou acceptable par le consommateur. Il s'agit des opérations de triage, la mise en sachet, la mise en carton, la mise en palette ou en conteneur.

IV.1 Le triage

Il a pour but d'éliminer, après le séchage les éléments hétérogènes pouvant nuire à la bonne conservation du produit séché: Il s'agit des tranches trop grosses restées moues (trop hydratées) ou brunies par suite d'insuffisance ou d'excès de température, et les tranches trop petites.
